It's subtly sweet, airy, and a bit savory, the perfect after dinner treat. The lavender flowers complement the blueberries so well, but to add another dimension, you can try adding a tablespoon of lemon or even some limoncello. You're sure to impress your friend and family with this delightful treat.
Ingredients
1 pint of blueberries
1 can of coconut milk
1 t vanilla
1 T agave or maple syrup (optional)
1 t edible lavender
1-2 T lemon juice (optional)
Directions
Wash the blueberry and add them to a ice tray. Pour the coconut into a measuring cup and add in the vanilla, agave, and lavender. Pour mixture over the blueberry, filling about 3/4 full. Allow to freeze at least 4 hours or overnight. Put cubes through shoot in the Yonanas machine or blend in a Vitamix until creamy smooth. If using Vitamix, you'll need to add about 1/4 - 1/2 cup of non-dairy milk. Top it all off with dollop of vegan whipped cream and some fresh blueberries.
