This super simple french toast is so easy to make and it's so darn good. It's soft, creamy, and a little bit gooey on the inside, yet crispy and golden brown on the outside. It's weekend breakfast perfection! Top with some maple syrup, fresh fruit, and vegan coconut whip. Ingredients
6-8 slices of thick bread
Batter Ingredients
1 c non-dairy milk
1 T flax - ground
2 T cornstarch
1 t baking powder
1/2 t cinnamon
1 t vanilla
1 T brown sugar or maple syrup (optional)
1/2 lemon - juiced
6-8 slices of thick bread
Instructions
Whisk together all batter ingredients in a shallow bowl large enough to fit the slice of bread.
Heat a large non-stick pan on medium.
Whisk batter just prior to dipping the bread to ensure all the ingredients are incorporated and haven't settled to the bottom of the dish.
Dip each slice of bread into the batter for approximately 5-10 seconds to absorb some of the custardy liquid. Be sure not to drench it to otherwise it will get soggy. If using a very dry bread, reduce to only a second or two because it will absorb the batter more quickly.
Put the bread into the pan and cook on each side until golden brown and crispy. Top with maple syrup, butter, vegan whip cream, fresh fruit, or powdered sugar.
