Have you ever heard of a carrot dog? I discovered them this summer and my mind was blown! I was skeptical at first, but after just one bite, I was hooked. They are marinated in a spicy, smoky sauce which brings these carrots to life. Trust me, they're absolutely delicious and you can top them with virtually anything.
Ingredients
6 carrots - washed, peeled, and cut to bun length
6 hot dog buns
Marinade
1/2 cup water
1/2 t low-sodium vegetable Better Than Bouillon
1 /4 c low-sodium soy sauce
2 T apple cider vinegar
1 T rice wine vinegar
1 T maple syrup
1 t dried mustard
1/2 t liquid smoke
1/2 t whole coriander
1 T smoke paprika
1/2 t garlic powder
1/2 t onion powder
*If you have Bacon Seasoning from Local Spicery, add 2 t and omit the smoked paprika, onion & garlic powder
Directions
Step 1: Cut, peel, and clean the carrots and add them to your instant pot.
Step 2: Whisk all the marinade ingredients together until well blended and then pour over the carrots. Cook for 3 minutes and then use the quick release steam valve. Pierce with skewer to check for tenderness. If still super crunchy, cook for another 1-2 minutes. Once cooled, transfer to a ziplock bag to marinade at least one hour or overnight. Turn the bag over occasional to ensure all sides of the carrots are in the marinade.
Step 3: Cook on a grill or in a pan, basting occasionally with my remaining marinade just long enough to get some blackened char.
Step 4: Top with all your favorite condiments. I adorned mine with a little vegan mayo, dill pickle, avocado, onion, tomato, and ketcup. But, get creative, this is where the real magic happens.
