What is Sofritas? It's crumbled bits of chewy and slightly crispy tofu that has been simmered in a deliciously savory and spicy sauce. It's the dish that I was inspired to recreate after enjoying it over the past couple years at one of my favorite restaurant chains-- Chipotle. It's actually super easy to make and can be used as filling in taco's, burritos, or in a Mexican bowl. I hope you enjoy my version of Chipotle's amazing vegan dish.
Ingredients
1 block of extra firm tofu - drained and excess water removed
2 t corn starch
1/2 yellow or white onion - chopped
Marinade
3/4 c water or vegetable broth
1 pasilla pepper - halved, seeded, roasted under broiler until just charred a bit
3 cloves of garlic - peeled
1 chipotle pepper in adobo sauce
1 T adob0 sauce from can of chipotle peppers
1 t cumin
1 t oregano
2 t vegan Worcestershire sauce
1/2 t salt
1/2 t smoked paprika
1-2 t maple syrup (optional)
2 T tomato paste
oil spray (optional for cooking)
Instructions
Remove tofu from the package and wrap in kitchen towel, put it on a plate, and cover with something slightly heavy to force out the excess water. You can use another plate or even a pan. Set aside for about 15 minutes to let gravity do the work.
Brown the onions in a large non-stick skillet sprayed with oil. Crumble in the tofu and sprinkle with the corn starch. Stir to combine. Cook until tofu gets brown and a bit crispy.
While tofu is cooking, combine all other ingredients into the food processor and blend until smooth.
When tofu is done, pour in the marinade and bring to a slow boil, reduce heat and simmer for at least 15 minutes, adding a little water if necessary to braise.
This can be served as taco meat or used to create a delicious bowl made with rice and beans and topped with lettuce, salsa, avocado, and vegan queso and sour cream!
