Who doesn't love the classic Caesar salad? For me, the best part is the creamy, zesty, and garlicky dressing. This vegan version will not disappoint. It's rich, indulgent, and full of flavor. In fact, it's so good, you may want to double the recipe!
Ingredients
1 cup almonds or cashews - soaked overnight, drained, and rinsed
1 1/2 c water
1 lemon - juiced
1 T Coconut aminos
2 T vegan worcestershire
3 cloves of garlic
1/3 c nutritional yeast
2 T dijon mustard
1/4 - 1/2 t salt (optional)
Fresh cracked pepper
Instructions
Combine all ingredients in a high-speed blender for about 1-2 minutes until creamy smooth. Taste for salt & pepper. If you want it to be more garlicky, start by adding 1/4 t of garlic powder and blend to combine.
