This addicting nacho cheese is made from cashews, nutritional yeast, vegetables, and spices. It is super easy to make and great in enchiladas, on tacos, or on top of a stuffed baked potato.
Ingredients
1 ½ cups of water
2 small carrots - peeled and roughly chopped
1 small red bell pepper - roughly chopped
1 cup raw cashews
1 lemon - juiced
½ c nutritional yeast
1 t smoked paprika
½ t chili powder
1 t garlic powder
½ t onion powder
½ -1 t kosher salt depending you’re your taste
½ t dried mustard Instructions
1. Combine the water, carrots, red bell pepper, and cashews in an instant pot. Set the manual timer to 5 minutes. Use the quick release steam valve once it's done cooking and then transfer to a high-speed blender when it cooks slightly.
2. Add the remaining ingredients and blend until smooth.
3. If you would like a little more heat, you can add in some sirarcha or cayenne pepper.
