I absolutely love BBQ sauce! When it's slathered on shredded mushrooms, it makes an amazingly meaty and chewy vegan version of a pulled "pork" sandwich. Top it off with some apple slaw and you have a delicious meal that will have your family and friends raving.
Pulled "Pork" Ingredients
10-16 oz king oyster mushroom - shredded
2-4 hamburger buns
1/4 medium red onion - thinly sliced
garlic & onion powder to taste
1/4 c favorite bbq sauce
dill pickles (optional)
Apple Slaw Ingredients
1 pk shredded coleslaw mix
1 apple - julienned
1/4 red onion - thinly sliced
1/4 c vegan mayo
2 T maple syrup
2 T apple cider vinegar
1/2 lemon - juiced
1/2 t dry mustard
1/4 t celery seed
Salt & Pepper to taste
Instructions
Start by making the slaw. Add all slaw ingredients to a large mixing bowl and combine thoroughly. Set aside in the refrigerator to allow ingredients to marry for at least 2 hours.
When slaw is ready, start making the pulled "pork" by shredding the mushrooms with a fork and knife. Add to a dry low heat pan and cook until the moisture is release and evaporate from the mushrooms and they start to brown. Add the red onion and cook until translucent. Stir in your favorite BBQ sauce and cook until warmed and sticky.
Serve as sandwiches or sliders by spreading some BBQ sauce or mayo onto a toasted bun, then top with a large scoop of the mushrooms and slaw. You can also add pickle for an extra zip of flavor!
